A Mimosa riff with pomegranate, spiced syrup, and a dash of vodka to keep things boozy.

Keeping the Valentine's Day theme going, here's another beautifully red drink. This one features the delicate pomegranate juice from The Berry Company, which is blended with aronia berry, rosehip, and grape.
To give it an extra pomegranatey oomph, I also used the juice to mix up a spiced syrup, which is a great way to double down on the flavour. There's some vodka in here too to really round the drink off and cut through any additional sweetness.
Of course no Valentine's drink is complete without edible glitter. This gold dust from Pretty Sip is the sparkliest I've seen and looks beautiful against the red. Perfect whether you're planning a romantic meal or getting boozy with your Galentines.
Ingredients

30 ml pomegranate juice
1 bsp lemon juice
1 bsp winter spice syrup*
15 ml vodka
Top with sparkling wine
Garnish: edible glitter
Winter Spice syrup: in a saucepan combine 120 ml of pomegranate juice, 120 g of white sugar, 1 stick of cinnamon, 1 star anise, and 3 cloves. Simmer for 15 minutes, taste and add extra water if needed to reduce the sweetness slightly. Strain and store in the fridge for a week, add a dash of vodka to make it last longer.
Method
Add all the ingredients aside from sparkling wine into a cocktail shaker half filled with ice.
Shake lightly.
Run lemon over a section of the flute, sprinkle edible glitter over and use a piece of kitchen roll to remove any excess.
Double strain into a champagne flute.
Top up with sparkling wine.
